Description
Vinification of this Cabernet Franc is straightforward using ripe, gently crushed fruit and 20% whole cluster inclusion, pre-fermentation cold soak, moderately warm fermentations pumped over to delicately extract tannins and color, and aging in stainless steel with minimal racking and blending. The goal is to let the fruit express the structure, fruit and tannins that come from the surrounding Seneca Lake vineyards.
