Description
With all these great vineyard sites to choose from, we are able to offer quite a complex and approachable Cabernet in the 2014 vintage, which was one of the warmest vintages on record. With all of the lots harvested from late September to early October, we had the opportunity to blend some perfectly ripe fruit, with a great balance of acidity and complexity that you would come to expect from such a warm vintage. The Cabernet Sauvignon and Malbec lots were fermented in our upright stainless steel fermenters
with 797 yeast used on the Champoux, Sheridan, and Clifton Bluff Cabernets. PDM yeast was used on the Coyote Cabernet and Goose Ridge Malbec. The Merlot was fermented in our rotary fermenter with 797 yeast. This wine finished malolactic fermentation then was aged for 19months in 2-year-old and 3-year-old French Oak barrels.
