A  funky, tannic cider made from apples purchased from Normandy. The winemaker at No Control is a Normandy native, now making wine is the Auvergne. Wanting to make the drink his home region is famed for he got apples and did just that. Applying the same non-interventionist techniques this is made with wild yeasts and no additives. Done in the traditional keeving method, allow a cap of the sediment and pulp to form on the top of the cider that slowly choked off the ferment leaving a tiny bit of sweetness.
