At sight it is a very light gray wine, unfiltered. On the nose there are notes of ripe apple, wet stone and salt. In the mouth the fermentation notes, dried plum, earthy notes and umami are clearly appreciated, supported by a fine and persistent acidity.

Description

The two varieties are harvested together and spontaneously fermented together in stainless steel tanks, where they remain for another 150 days in contact with the skins. The refinement of the wine, in neutral containers that do not affect its naturalness, lasts 6 months, at the end of which it is bottled with a negligible addition of sulfur, to stabilize another year before being marketed.
