| Vineyard | The 2021 growing season on Mount Veeder produced small, intensely flavored berries that had immediate depth of color and flavor. Winter rains were light, marking the second year of a drought. In fact, the season had the lowest rainfall total in 55 years of data – 18 inches on an average of 47 inches. The dry season contributed greatly to lower yields, a naturally balanced canopy, and an early, compact harvest. |
| Winemaking | The 2021 Cabernet Sauvignon is comprised of grapes from eleven estate vineyard sites and one grower site – each harvested by hand between August 31 and September 9. At the winery the clusters were sorted by hand and de-stemmed. Fermentation occurs at lower temperatures in a mix concrete tanks, stainless steel tanks and oak puncheons– with an average maceration time of 19 days. The wine was aged in neutral Foudre and 500L puncheon (20 months) and 225L neutral French barrel (12 months). The final blend is comprised of 100% Cabernet Sauvignon. |
