VINEYARDS The Saint-Tropez Peninsula with the maritime influence benefits not only from very mild temperatures all year round but also from the greatest amount of sunshine in France (2800 to 3000 hours per year). This climate favors optimal maturation of both Grenache and Cinsault. The vineyards are protected by the surrounding mountains, which help to moderate the cold northerly Mistral wind.
OUR SOIL Soil is volcanic origin, primarily Gneiss, and Maures with sandy topsoil.
WINE MAKING Grapes are hand picked at night to insure freshness. Grapes are immediately direct pressed in pneumatic press to retain primary aromas. No maceration takes place to preserve elegance. The resulting wine is cold fermented between 13-16°C for 15 days.
GRAPES: 60% Grenache, 40% Cinsault The grapes were sourced from vineyards located in Sainte Victoire, planted on clay and limestone soils. The hand-picked fruit was gently pressed and cold fermented in stainless steel.
