This spectacular dry Riesling comes from perhaps the greatest Austrian vineyard found outside of Wachau. Heiligenstein is a terraced vineyard with exceptional exposure and a rare geological make-up whose reddish-brown sandstone has been dated back 280 million years. Hirsch farm their parcels with strict biodynamic protocols, which extend into a very hands-off approach in the cellar. The estate crafts Riesling in a very traditional way, with whole cluster press, ambient yeast, neutral oak, and extended time on the lees.
