Description

The highly appreciated Chardonnay has the particularity of being aged in 225 l barrels as soon as alcoholic fermentation occurs and is aged there for 24 months. The barrels are topped up but no racking is done before bottling. Exclusively from vines over 40 years old, these wines can age between 10 and 15 years depending on the vintage. The special 2001 old vines vintage is a blend of 40% Savagnin and 60% Chardonnay. The Savagnin is aged in 225 l barrels to obtain the famous Vin Jaune. For this, it must remain at least 7 years in barrels. Made from Chardonnay, Vin de Paille is dried in shelves for 4 months before being pressed.
