Description

Winemaking: Whole bunches are collected in a pneumatic press. Cold settling takes 12 hours at 12 to 15C in wide tanks to accelerate the process naturally and produce very clear juice. Fermentation at 16C in stainless steel tanks for 15 days. Aging of 6 months on fine lees in stainless steel tanks. Minimum filtration to preserve the natural character of the wine.
