Clarisse, apart from the fact that she produces wines, is a former professional pianist. After a detour to a business school to train in management, Clarisse returned to settle in her native Burgundy. The estate is made up of 1.15 hectares, with Pinot Noir and Gamay, particularly located in the lower part of Pommard. Clarisse also took over an Aligoté vineyard in the lower part of Volnay in 2020. The estate is therefore growing little by little and is supplemented by a few purchases of grapes, in particular Chablis, because she “loves it”. In the vineyard, the treatments are organic and Clarisse is very interested in biodynamics. She was initiated there by David Didon, head of cultivation at Château de Puligny and one of the figures of local biodynamics.
