The Trois Pépins Dry Cider is made from apples, pears and quince partially fermented using the “guillage” (“foaming”) technique (fermentation of the juice recently funneled, which pushes the foam called yeast out of the barrel). It’s a Pure Juice Cider; fermented with its native yeasts and coarsely filtered.
