| Winemaking | Early manual harvest, approximately one week before the regular timing for the zone. Spontaneous fermentation with native yeasts, without temperature control. The clusters are destemmed, and the berries are gravity-fed to 700l and 1000l clay amphoras, where fermentation takes about 1 month. The wine is then pressed, and it returns to the amphoras for aging. No use of any additive or addition of sulfites. |
