IN THE VINEYARD: Manual harvest. In some vintages we harvest in different step, according to the maturation of the grape. IN THE CELLAR: Cold maceration with skins for 72 hours on average, successive pressing. Fermentation temperature controlled at 17°C. Malolactic fermentation does not occur. This parcel as a whole is called Rosey but in the 18th century a small parcel called "Sept Ranches" appeared in the southwest corner near Plantenay. Ranche is a form for the word "ronce " from the Latin ‘RUMEX’ which means "small sorrel, a species of stinger plant". Other variants such as "ronche", "ronde" and "ronze" appear in the place-name history of Burgundy.
