Created from 70 % rye grown on a family farm, 15% malted barley and 15% corn from NYS farms; double distilled in our French alembic pot still; aged for 12 months in new American Oak charred barrels and finished for 3-4 months in used Portuguese Port barrels.

Description

The granary processes the rye grain grown on the farm with corn and malted barley grown on nearby farms. Then blend the ground rye, corn and barley into a rich mash and ferment it in the mash tun. Then it’s double distilled in the mash in a Alembic Charentais Pot Still in order to enhance its flavor and proof. Finally aged the distillate for at least one year in a combination of new toasted oak barrels and premium used Port barrels.
