Neversink Bourbon is made from a mash of New York-grown corn (60%), winter wheat (20%), and malted barley (20%). The grains are milled on site at the distillery and then mashed and fermented in stainless steel. The mash is twice-distilled in a pot still to create a flavorful, grain-forward spirit. The distillate is then proofed down to ~110 proof and aged in 15 and 30-gallon, new-charred American oak barrels for a minimum of two years. The spirit is then transferred to an apple brandy cask for finishing before being proofed down to 43% ABV for easy-drinking, neat or on rocks.
